Almond Butter Bread

almond butter bread
Found this recipe yesterday. It looks yummy. I don’t particularly like the taste of almond butter out of the jar so I’ll use it for this. However, given my not so good reaction to the coconut bread I made last week, I’m going to leave it a few weeks before I make it.
So I tried this recipe. It tastes awful.
The baking soda plus the salt made it way too salty. The texture is ok – light and spongy – not like bread though.
The almond butter taste was overpowering – Unless you really like the taste of almond butter out of the pot you won’t like this recipe.
I think tweeking the recipe with another nut better and adding sweetner or cinnamon or something with a strong flavour, and using baking powder rather than soda may improve this for me. Ill post when I try it.
Found another recipe:

Basic Nut Butter Bread

1 cup nut butter (cashew, peanut or almond)

4 eggs

3-4 Tbsp unpasteurized honey (substitute with sweetener)

1⁄4 cup nut milk (almond, cashew or coconut)

2 tsp lemon juice or apple cider vinegar

1⁄4 cup coconut flour

1 tsp baking soda

1. Preheat oven to 300F (190C)

2. Line a bread pan with parchment paper

3. Whisk or beat together eggs, lemon juice, nut milk and butter and

honey until a smooth mix has formed.

4. When mix is creamy add in coconut flour and baking soda

5. Pour batter into bread pan,the batter will not be

doughy like a traditional bread dough but rather sticky and like a

cake batter

6. Bake for 45 minutes

7. Enjoy!
