What an inspired idea!
Coconut is an antifungal and as such an important part of the Anti-Candida. I’ve been using it in granola and sweeter recipes, and the oil for stir-frying and baking, but it never occurred to me to use it in a savoury salad. Genius! I got the idea from this Blog which although I am new to, I love.
I would omit the fruit and add some other sauteed veg – like courgette or aubergine.
But this is definitely one I’ll try soon.
