Chicken, Thyme and Ginger soup

Ginger and Thyme chicken soup

I made this today simply because its what was in the kitchen. It turned out beautifully and even my little one cleaned his bowl! The hint of ginger lifted the homely flavours beautifully.

So heres what I did:

Chicken, Thyme and Ginger soup


  • 2 white onions, finely chopped
  • 2 shallots, finely chopped
  • Tbsp olive oil
  • 3 cloves garlic
  • 1.5 inch piece ginger minced
  • Two leeks trimmed and finely chopped
  • 6 chicken thighs
  • 3 bay leaves
  • fresh thyme
  • 1L Organic yeast free stock
  • 1 tbs paprika
  • Sea salt and freshly ground black pepper to taste


  • Heat oil in a heavy bottomed pan saute onions and shallots over a medium heat
  • Add leeks and cook till softened
  • Andd minced ginger and garlic and stir
  • Add paprika, salt and pepper
  • Add Chicken thighs
  • Pour over stock and add fresh thyme and bay leaves
  • Cover and cook until the chicken is tender and will fall easily off the bone
  • Remove lid and allow sauce to reduce a little
  • Remove bay leaves, chicken skin and bones

I served the soup garnished with a few thyme leaves, raw onion bread and hummus on the side.
