Gluten free Turkey Burger

We have been to a few barbecues recently and my son has decided that he likes burgers very much! So we made some for tea.

To make them gluten free, I used egg and Chia seeds to bind them together instead of the usual breadcrumbs. Just chia seeds can be used for an egg free recipe.

Easy and quick and yet tasty and filling. I had mine wrapped in this beautiful curly lettuce with a mint and chive raita.

Inspired by a Michel Roux Jr. idea, I hid some mozzarella cheese inside the boy’s burger, so that when he bit into it, the melted cheese oozed out. A delicious surprise! His was also served on a brioche bun, and topped with caramelized onions.

Turkey Surprise Burgers with mint and chive raita

Ingredients: (makes 6 large burgers)

  • 2 tbs oil
  • 600g Turkey mince
  • 3 shallots, finely sliced
  • 2 red onions, sliced into rings
  • 2 tsp paprika
  • 1 tsp chilli powder
  • 1 tbs dried mixed herbs
  • handful fresh basil, chopped
  • Freshly ground black pepper
  • Salt, to taste
  • 1 Egg
  • 1 tbs Chia seeds, soaked in a small amount of water for 10 mins
  • 6 slices Mozzarella (optional for dairy free recipe or substitute a cheese of your choice)

For the Raita:

  • 0.5 cucumber, peeled and finely chopped
  • 3 tbs natural probiotic yoghurt
  • 0.5 tbs chives, chopped
  • 0.5 tbs mint leaves, shredded
  • Freshly ground black pepper
  • Salt, to taste
  • Squeeze lemon juice


  1. Heat 1 tbs oil in a pan over a low heat and cook the red onion  with a pinch of salt until caramelized
  2. Put the turkey mince into a large bowl
  3. Add the spices, herbs and seasoning, shallots, egg and chia seeds
  4. Using your hands mix all the ingredients until well combined
  5. Form the burgers in your hands hiding a slice of mozzarella in the middle of each pattie
  6. Place the formed burgers on a plate, cover with cling film, and refrigerate for 30 mins or until ready to cook
  7. Heat 1 tbs oil in a griddle pan until hot
  8. Place the burgers in the pan. When the underside has turned a lovely brown colour, turn the burgers over, until they are cooked through (This step can be done on a BBQ of course)
  9. If topping with mozzerella, place the burgers under the grill with a slice of mozzarella on top until melted
  10. Serve on a brioche bun with crispy lettuce, sliced tomato, the raita and the caramelized onions

For the Raita

  1. Mix all the ingredients in a bowl and chill until ready to serve
