Marinated Vegetable Kebabs

Few things speak of summer suppers like grilled vegetable kebabs.
Their colours are inviting enough, but in a moment of inspiration I marinated mine overnight in this punchy zingy garlicky herby dressing and they tasted as lovely as they look!

Marinated Vegetable Kebabs

Ingredients: (makes 8 kebabs)

  1. 2 courgettes (zucchini), sliced
  2. 1 large red onion, quartered
  3. 36 cherry tomatoes
  4. 36 button mushrooms
  5. spray olive oil
  6. Skewers (if wooden pre-soak before grilling to prevent them from burning)

For the marinade:

  • Juice of  one lemon
  • Juice of one lime
  • 1 tbs Olive oil
  • 1 tbs minced garlic
  • Salt and pepper to taste
  • 1 handful chopped coriander


  1. Place the chopped vegetables into a bowl
  2. Mix together the marinade ingredients and pour over the vegetables
  3. Chill in the refrigerator for a few hours or overnight
  4. Thread the vegetables onto skewers
  5. Spray with olive oil and place under a grill or on a BBQ, turning regularly until cooked and slightly browned
  6. Enjoy!
