Gluten free Falafel

Flour free Falafel with hummus and baby spinach

I had a couple of tins of chickpeas so thought I’d experiment with making some gluten free Falafel as part of my birthday Meze.

Without any flour I wasn’t sure how well they would hold together so I added some chia seeds. They did hold together and were very tasty.

Flour-Free Falafel

Ingredients: (makes 20)

  • 2 tins Chickpeas, drained. (If using dried chickpeas, pre-soak overnight)
  • 1 white onion, finely chopped
  • Handful fresh coriander, chopped
  • Rind of a lemon, grated
  • 2 tsp ground Cumin
  • 1 tsp Paprika
  • 2 tsp Salt
  • 2 cloves garlic
  • Freshly ground black Pepper
  • 1 Egg, beaten
  • 1 tsp Chia seeds, presoaked (optional)
  • 2 tbs oil

Directions:

Line 2 baking sheets with baking parchment or foil (sprayed with a little oil)

Heat one tablespoon of oil in a pan and saute the onion till soft

Put the chickpeas in a large bowl and mash with a fork

Add the onion and all the herbs and spices, mix and blend till smooth using a hand blender (Steps 1-4 can be done in a food processor)

Add the beaten egg, and chia seeds and mix until smooth

With wet hands, form the mixture into balls and press into patties on the baking sheets

Chill in the refrigerator for 30 minutes

Bake in the oven for 15 minutes till firm to the touch

Heat the oil in a skillet over a medium heat and fry the falafel in batches until browned and crispy

Serve immediately with lemon wedges, or chill in the refrigerator till ready to serve.
