Baked aubergine and garlic Kale

The idea for this is not original, but it was the first time I had tried it and it was quite simply delicious.

Simple, rustic, flavour companions that can’t go wrong!

Oven roasted aubergine and garlic Kale


  1. 2 Aubergines (eggplant), cut in half lengthways, (keep the stalk on to help the aubergine keep it’s shape once cooked)
  2. 150g cherry tomatoes, quartered
  3. 1 white onion, finely sliced
  4. 1 tbs Olive oil
  5. 2 tsp Pesto
  6. 1 Green pepper, finely chopped
  7. 4 cloves Garlic. chopped
  8. 1 tsp paprika
  9. 0.5 tsp chilli powder (optional)
  10. Handful basil leaves, chopped
  11. 1 Bay leaf
  12. Salt
  13. Black pepper
  14. 200mls Stock
  15. 200g Mozzarella cheese, sliced

For the kale:

  1. Garlic infused olive oil (I finely chopped 4 galic cloves and put them into the oil to infuse for an hour before cooking the kale)
  2. Three large handfuls of kale, washed and sliced into ribbons


  1. Preheat oven to 200C
  2. With the point of a sharp knife, lightly score diagonals into the the cut side of each aubergine half
  3. Place in a baking dish, drizzle with oil and season with salt, pepper and paprika
  4. Bake for 40 mins
  5. Heat a tablespoon of oil in a pan
  6. Over a low heat slowly cook the onions with a pinch of salt until caramelised
  7. Add the chopped peppers, garlic and cook until softened
  8. Stir in the tomatoes, basil and pesto and cook for another 2 mins
  9. Pour over the stock, add the bay leaf and black pepper and simmer for 20 minutes
  10. Set aside to cool
  11. When then aubergines are baked and golden
  12. Top with the tomato sauce, lay slices to mozzarella on top and return to the oven for 10 minutes until the cheese has melted
  13. Serve immediately with the kale on the side

For the kale:

  1. Steam for 8-10 minutes until softened
  2. Heat the oil in a pan, add the kale and toss for 2-3 minutes until well coated
