Indulgent carob and Hazelnut cookies (gluten dairy and sugar free)

Inspired by these flour less biscuits I decided to try some cookies this morning

. It’s too hot for baking that takes any more than 15 minutes!
I didn’t have a plan other than a few ingredients I wanted to use but these turned out brilliantly. Deliciously rich and indulgent. You’d never know they were gluten, dairy and sugar free

Indulgent Carob and Hazelnut cookies (gluten dairy and sugar free)

Ingredients:

  • 1 tbs hazelnut butter
  • 1 tbs carob spread
  • 3 tbs almond flour
  • 1 tbs buckwheat flour
  • 2 tbs granulated sweetener (I used xylitol)
  • 1 egg
  • 1 tbs chia seeds (optional)
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 1 tbs unsweetened dessicated coconut
  • 1 tbs chopped hazelnuts for decoration

Directions:

  1. Preheat oven to 176c
  2. grease or line a baking sheet with baking parchment
  3. Mix wet ingredients together
  4. In a separate bowl mix the dry ingredients together.
  5. Fold the dry ingredients into the wet until a smooth batter forms
  6. Drop batter onto baking sheet spaced approximately 1 inch apart and sprinkle with chopped hazelnuts
  7. Bake for 8-10 minutes so risen slightly an firm to the touch but still slightly soft in the middle
  8. Cool on a wire rack
  9. Enjoy!

  1. Thank you for adding the link with my recipe on your page. Your blog looks very nice! And the recipes are healthy and seem to be yummy. This recipe is alos sugar free which you should mention and add a tag for that. I was searching the web for sugar free recipes few months ago but couldn’t find much. That’s why I started creating them myself.
