Chicken, feta and green pepper pizza bites



The boy and I were going on a picnic and so I made these little pizza flavoured quinoa bites.
Whilst they don’t look anywhere near as inviting as a slice of pizza they do taste like one and are light, healthy, filing and delicious hot or cold.

And as with a pizza, you can make them with whatever your favourite pizza toppings are.

 

Chicken, feta and green pepper pizza bites

Ingredients:

  • 100g Quinoa, pre-soaked
  • 1 Bay leaf
  • 1 White onion, finely chopped
  • 1 tsp minced garlic
  • Small handful basil, finely chopped
  • 1 Green pepper, finely diced
  • 1 roast Chicken breast, finely diced
  • 2 tsp sweet Paprika
  • 2 tsp italian seasoning
  • 1 tsp chilli powder
  • 1 tsp red tomato pesto
  • 1 Egg, beaten
  • 1 tbs Chia seeds
  • 50g Parmesan or cheered cheese, finely, grated
  • 50g Feta cheese, finely diced
  • 1 tbs oil
  • Salt and black pepper to taste
  • 200mls water or stock

Directions:

  1. Simmer the quinoa and bay leaf in 200mls water or stock over a medium heat until softened but still having some texture
  2. Drain and set aside
  3. Beat the egg and stir in the chia seeds and leave to stand for 10 minutes
  4. Preheat oven to 150C
  5. Meanwhile, heat the oil in a pan and slowly cook the onions with a pinch of salt until caramelised
  6. Add the garlic, pepper, herbs, spices and cook until the pepper is softened and beginning to brown
  7. Stir in the chicken breast and pesto
  8. Empty from the pan into the quinoa and mix
  9. Stir in the egg mixture, cheese, and season to taste
  10. Spoon into a pre-oiled muffin tin and bake for 50 mins to 1 hour until set, golden and slightly crispy on the outside
  11. Cool on a wire rack and serve warm or cold
