Purple Basil Pesto Talapia Sandwich

I found some lovely bunches of purple basil in the grocers this week and decided to make some pesto with it. I like the slighly peppery edge to purple basil and I was hoping for a purple pesto!

Unfortunately, the basil didn’t stay purple (!) but it tasted lovely and I decided to use it with this talapia dish.

Talapia Pesto Sandwich


For the pesto:

  • 2 handfuls purple basil, chopped
  • 1 tbs olive oil
  • 2 tsp minced garlic
  • 1 tbs sundried tomato paste
  • rind of one lemon, finely grated
  • salt and pepper to taste

For the fish

  • 2 talapia fillets
  • 2 tbs pesto
  • 1 tbs parmesan cheese, grated (optional)
  • 1 tbs toasted almond flour
  • 0.5 lemon sliced
  • 5 cherry tomatoes,
  • 1 tbs olive oil
  • salt
  • freshly ground black pepper


  1. Place the basil, garlic, tomato paste, and oil in a food processor and blitz till smooth
  2. Stir through the almond flour and cheese and season to taste
  3. Stir through the lemon zest
  4. Preheat oven to 176C/350F
  5. Spread the pesto onto one talapia fillet and place the other on top so it forms  a sandwich
  6. Place on a sheet of foil, and arrange the lemon slices on top
  7. Tuck the cherry tomatoes around the fish and seal the foil
  8. Place in a baking dish and bake for 30 mins
  9. Serve immediately with roasted potatoes and crispy Kale
